Strength of Association Between Flavours
The flavours most associated with saline notes are: Grassy, Leafy, Thyme, Starch, Rice, Pea, Basil, Petrichor, Malty, Asparagus, Rosemary, Sage, Capsaicin, Tomato, Capsicum.
Our analysis shows that the flavour of brine is strongly associated with the flavour of grass. This suggests we should look for ingredients with a grassy flavour, such as chlorophyll, when pairing with the briney accents of squid.
